With a focus on specialty coffee, light snacks and education, Sine Coffee Labs opened inside Volta, Canada’s East Coast Innovation Hub, on Monday, June 10.  

The full-service coffee shop, located on the lobby level of the Maritime Centre, will focus on high-quality hot and cold espresso drinks, drip and pour-over coffee, and tea, as well as smoothies and light snacks. Food offerings include pastries, salads, wraps and more.

In the near future, owners Alex Lee and Joe Dunford also hope to educate and engage the public on all things coffee through various workshops and training seminars.  

“We are looking to promote the specialty coffee culture in our region, and are thrilled to be doing so at Volta. Every coffee business adds significant value to our community as a place to gather, work, and learn, but we want to go beyond that to bring educational value to our customers about the product itself, too,” Alex Lee, co-owner of Sine Coffee Labs, said.

“Globalization does not have to only apply to integration of big corporations and their cultures. For us, it means sharing the best and most innovative practices and values to develop our own identity, proudly home-grown here in the Maritimes,” Lee added.

Back in 2016, Lee and Dunford opened the Cortado Tasting Room in Bedford, and that’s where the Sine Coffee Labs team underwent rigorous barista training, to elevate the coffee experience for customers.

“Independent coffee shops have a unique ability to take on the character of the communities they serve, and with Sine Coffee Labs’ attention to detail and innovative approach to coffee as a science, it is going to cater to the Volta community and beyond very well,” Martha Casey, Volta COO, said.  

Sine Coffee Labs will be open from 7:30 am to 3:00 pm, Monday through Friday.
